Crockpot Green Chili Pork With Cilatro Lime Cauliflower Rice
This recipe uses a slow cooker for the pork, so the prep is really easy. To save time, grab a can of green chilies to create something you can throw together in the morning before work and let it cook all day. Feel free to use fresh chilies if you want.
After your pork has cooked, you can quickly make your cauliflower rice, add some grilled veggies…and boom! You’ll sit down to a wonderfully awesome meal full of flavor.
Ingredients:
- 2 lbs of pork shoulder or pork butt
- 1/2 onion, chopped
- 2 cans (4 oz size) of green chilis, or use fresh chilis if available
- Juice of 2 limes (about 1/4 cup)
- 1/2 cup chicken broth
- 1 tbs chili powder
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- 1 tsp cumin
- 1/2 tsp cayenne
Green Chili Pork Ingredients:
- 1 head of cauliflower – "riced"
- 1/4 cup broth (from the crockpot)
- 1/2 tsp garlic powder
- 2 limes, plus zest
- 1/4 cup chopped cilantro – leaves only
- Salt and pepper to taste
Instructions
Here are your instructions:
Set slow-cooker to low
Chop onion and add to slow-cooker
Pour in 1/2 cup of chicken broth
Next combine all of the pork spices in a small bowl
Use the spices as a rub and coat the pork roast completely on all sides
Juice the 2 limes, and add to slow-cooker
Add your pork roast to the slow-cooker
Pour the two cans of chilies over the roast
Cook for 6-8 hrs. Slow-cooker temperatures vary. Mine does fine on low, but you may need to adjust yours depending on your cooker/crockpot
Note: it will look like there isn't much liquid in the pot. That's OK. As the roast cooks it will add its own juices to the liquid. You don't want to dilute the lime flavor by adding too much chicken broth.
Once the pork is done, start the cauliflower rice
Chop up a head of cauliflower and place in a food processor
Pulse it until it turns into particles resembling rice – this should happen pretty quickly
Turn on a cooktop burner to medium to medium-high heat
In a medium-sized pan add the cauliflower "rice"
Get some of the yummy broth from the slow-cooker – about 1/4 cup – and add to rice pan
Add 1/2 tsp of garlic powder
The cauliflower contains a lot of moisture – you'll notice it will start to steam in the pot
Just watch it and stir occasionally as it cooks. Continue cooking for 10-12 minutes
Taste the cauliflower rice for consistency
Once the rice is done, stir in the juice and zest of 2 limes, add cilantro, and salt and pepper to taste
Serve rice to the side or as a bed for the pork
Add vegetables such as grilled peppers if you like
